“Put frozen fish in the refrigerator overnight and thaw slowly. If you need to thaw seafood quickly, place it in a plastic bag and submerge it in cold water, or in the microwave if the food will be ready immediately High heat for a few minutes. The fish is still frozen, but malleable.
However, as you’ve discovered, putting it in the fridge overnight isn’t always the most convenient option. When defrosting vacuum-packed seafood (or beef, for that matter), it’s especially important to open the pack to let air in, as stated on our label. Afterwards, place the frozen scallops or opened packages in a clean plastic bag and place them in a dish of cold water for up to two hours. The scallops are small and will most likely thaw before the two hours are up.
Other thoughts: Keep in mind that the FDA’s recommendation to defrost food in the microwave only applies to “frozen seafood” in general, not scallops specifically. We never tried defrosting scallops in the microwave because we wanted to avoid doing anything that would cause the scallops to become springy in the first place. The FDA recommends that you remove it “while the fish is still frozen but malleable,” but we think it’s better for fillets than scallops of varying sizes.

This is crucial when baking bacon in the oven, because if they overlap, you don’t want the bits underneath to brown. You now need something to keep them out of the pan. Why? ? ? This way, the meat will be crispy on all sides and the fat will run off of it!
This can be called a wire rack or a cooling rack. I use them for two purposes. When I bake cookies, I put them on top and let them cool quickly without sticking to the pan and overcooking.
If you want to make cleaning a breeze, spray the racks with nonstick spray and toss them in the dishwasher. It’s a pain to scrub these things, no matter what you cook or cool them. I use my Bosch for everything that allows it to be thrown out there.

- Alternatively, you can use the defrost setting and thaw the bacon in the refrigerator for a few hours, long enough to tear the pieces apart, or soak the package in cold water for about 20 minutes until soft.
- Bake for 30-40 minutes, depending on how well the bacon pieces are separated on the rack. The length of time depends on how crisp and thick you want the slices to be.
- If you’re using a frying pan, start on low heat until it’s hot, then increase the heat to crisp it up.
If you’re using a pan, keep a plate lined with paper towels handy so the grease won’t run off. Take out the egg slices and serve with them, or crumble them up and add to your morning Crockpot breakfast dish!
