It may take a few minutes for the cream cheese to melt and become smooth, so be patient. Unless you’re okay with a heavier cream cheese flavor, start with a small amount of cream cheese at a time.

2. Parmesan-Reggiano

Add some freshly grated good quality Parmesan cheese. Your best bet is freshly grated full-fat Parmesan cheese. I prefer to buy a large block of Parmesan from Costco and grate it myself. If you know what I mean, it’s so much better than anything you’ll find in the pasta section of a grocery store shelf.

3. Shredded cheese

It’s also a good idea to add some of your own shredded high-quality cheese. If you must, use pre-shredded cheese; however, pre-shredded cheese doesn’t always melt well in sauces, so stick to a brand you know and trust. If possible, use a box grater or even a food processor to shred your own cheese. Depending on your preference, mozzarella, provolone or even white cheddar are good choices.

4. Heavy Cream

In a saucepan over medium heat, add a little heavy cream to the sauce and simmer or thicken slightly. However, thickening a lot of sauce with cream can be expensive, so it’s not always a good idea.

5. Corn flour (or arrowroot)

To make the slurry, in a small bowl whisk a little cornstarch and cold water (or other liquid) until smooth. In a saucepan over medium to medium heat, slowly stir the slurry into the simmering juices. Slowly stir the slurry into the hot sauce until it reaches the right consistency.

7. The yolk of the egg

Make sure you don’t end up adding scrambled eggs to your sauce with this!
