Well, my heart is beating as I type because I get so excited when I give people advice on how to make quality beef jerky! (#Perspective.) I asked Santa for a dehydrator. Here are some of my suggestions and answers to questions from friends:

Meat: The most common query is which cut of beef to buy. I’ve made various cuts of beef jerky, but the brisket has been without a doubt my favorite in recent years. This is one of the most expensive cuts, but it’s also one of the leanest, and I love how it forms tiny strips of beef jerky. Round eyes, top or bottom, or a London roast are all great options. In general, I recommend staying as lean as possible and cutting away any major areas of fat you notice.

I recommend cutting the meat as thin as possible (1/8 to 1/4 inch thick) when slicing. Then, if you want a chewier jerky (which I oddly like), cut the beef through the grain. If you want more tender jerky, shred the meat. This is something you can do at home if you want (just put the steak in the fridge for 15-20 minutes, then slice to help firm it up). Alternatively, the butcher behind the meat counter at your local supermarket will most likely be happy to help you. (

I know some people like to place the jerky directly on the oven rack and then put a layer of aluminum foil on the bottom of the oven to catch the dripping liquid, but I did that and it turned out to be a mess. Instead, I recommend using a wire stand.

However, I still believe that dehydrating beef jerky will yield the most consistent and best results. I own two different dehydrators and can attest that technology has improved a lot over time. Today, you can get a great dehydrator for $35-$75 that cooks jerky evenly and quickly. Of course, you can use the dehydrator to make a variety of fruit and vegetable chips, kale chips, and other delicious treats. So, if you love beef jerky as much as I do, I highly recommend the Cuisinart dehydrator I currently own.

Anyway, use whatever cooking method you like! In the recipe below, I’ve included instructions for the oven and dehydrated beef jerky.

To prepare homemade beef jerky, simply combine the cut beef and marinade in a large ziplock bag and stir until the steak is equally coated. Afterwards, refrigerate the bag for at least 30 minutes or up to a day to allow the flavors to meld.

Then, on a dehydrator tray or wire rack tray in the oven, spread the strips evenly and cook as instructed below. (Warning: this will fill your house with the most enticing jerky aroma you’ll ever smell!)

The best batch of beef jerky will be one that you enjoy and share, as the jerky is as dry as you want (I like mine to be very dry, but as long as it’s cooked, dark, and slightly malleable ,should be no problem).

So, congratulations on getting into the sharing phase, because I tend to keep that stuff. 😉

You might be wondering what bacon jerky is now, no? This should be! This is fantastic! The perfect snack is bacon jerky. It doesn’t need to be refrigerated or cooked. When you’re on a road trip with kids, you may need some peace and quiet. Simply feed them jerky! Because you know they have to chew each piece harder, leading to precious stillness.

There are many types of jerky in the market. Beef Jerky, Turkey Jerky, Tube Mystery Jerky and Chicken Jerky are available. Why not dry bacon? There is pork ham jerky, so why not bacon jerky?
