Avoid letting the quails touch each other to speed up the cooking process. Bake in the oven for 10-15 minutes, depending on how well done the quail you like. After 10 minutes, they’ll cook inside to about 150 degrees, cooked but a little pink.

What does roasted quail taste like
The feathers or six feathers on the top of the head distinguish quails from other birds. Even though quails are cute little birds, people hunt quails for eggs and meat. These little birds feed on seeds and grains and insects. Excessive hunting has nearly wiped them out in several regions of the planet.
Quails are ground dwellers, have light feathers and can only fly short distances at a time. They have a wingspan of 32 to 35 cm, have scaly feather patterns, and come in a variety of colors depending on the species. They are capable of laying 10 to 20 eggs at a time.
Quails are omnivores, which means they can eat almost anything, but plants make up 90% of their diet. Quails are small birds. When cooked, regular quail is not big enough to be eaten as a meal.
What does quail taste like? Quail and chicken have similar flavor profiles because they both live on the ground. However, quail is tastier and more tender than chicken. Quail tastes similar to a mixture of duck and chicken. Farm-raised quails taste more like chicken because of the way they are raised and the food they are fed. The bird’s bones are small and soft enough to eat.
Quail eggs are also edible and considered a delicacy in many culinary circles. The black bumps on the eggshells make them legible.
When it comes to quail, how can you tell when they’re done eating
Overcooking quail meat can cause it to become dry and rough. Quail is done when the meat is slightly firm to the touch (similar to cooked chicken breast) and the juices run clear.
Do quails need to be marinated
- If you overcook quail and other game birds, they will become hard and dry, just like more common poultry. Quail is easier to overcook than chicken because it is smaller. Marinating is the practice of soaking meat in brine, which protects the meat from the negative effects of overcooking. Also, similar to marinating, marinating allows you to infuse extra flavor into the meat. No matter how you prepare your quail, a good brine should help you get juicy, delicious results.
- While opinions vary on the ratio of salt to water, a decent rule of thumb and one easy to remember is one cup of salt to one gallon of water. Salt water can supplement other ingredients. If you want a sweeter brine, add half a cup of sugar to a gallon of liquid/water. To add flavor to the Texas Highland bird, you can add any herbs or spices.

4. Season with a pinch of salt and a pinch of dried chili.

You can use my scrub or a regular salt/pepper mix consisting of half kosher salt and half kosher pepper for great results.
Quail typically take an hour or so to cook, but since the legs are usually done before the breasts, you can speed it up by wrapping the legs in bacon. I’ve seen people wrap the whole bird in bacon, but I don’t think it’s necessary.
I often smoke them without any bacon wraps at about 225 degrees. They are juicy, soft and delicious.
TIP: If you have my book “Smoking Meat: The Essential Guide to Real Grilling,” look up my own Cuban Mojo recipe and pour it generously over the quail before placing it in the smoker. It will amaze you how wonderful it is!

Roasting quail in the oven is the easiest and most traditional way to cook. Everyone needs a bird. Roasted quail on the grill is also delicious. Whole quails are fried by the Chinese and eaten whole, including the bones.
When quail legs are lightly cooked in oil at low temperatures, a process called confit, they become delicious and tender.
Quail breasts can be pan-fried, roasted, or grilled and only take a few minutes to prepare. They are a great midweek dinner option. Unlike chicken, breasts can be pink in the middle. Since you’re unlikely to buy quail breasts and legs separately, follow our hookup instructions for complete birds.
