3. Dry the quail with a paper towel and place the quail breast side down on the plate. Cut the backbone with poultry scissors and discard. Flatten and press the bird.

Can I smoke quail
Have you ever thought about making your own smoked quail? Well, I’ve been smoking quail for a long time and it’s an easy process that only takes about an hour to complete even in a smoker.
If you want to brine quail, I recommend buttermilk brine, which is great for them.
Mix the salt and water together until the water is clear again. Mix the buttermilk thoroughly. Place quail in an airtight bag and cover with buttermilk brine.
You can use my scrub or a regular salt/pepper mix consisting of half kosher salt and half kosher pepper for great results.
Quail typically take an hour or so to cook, but since the legs are usually done before the breasts, you can speed it up by wrapping the legs in bacon. I’ve seen people wrap the whole bird in bacon, but I don’t think it’s necessary.
I often smoke them without any bacon wraps at about 225 degrees. They are juicy, soft and delicious.
