If you dry and repack raw corned beef brisket, it can be frozen for up to a month. Since salt increases rancidity and changes in texture, we recommend emptying the brine. With prolonged freezing, the taste and texture will deteriorate, but the food will remain safe.
Corned beef is made from less tender parts of beef such as brisket, rump, or round. As a result, extensive wet cooking is necessary. It can be prepared on the stove, in the oven, in the microwave, or in the slow cooker.
