In terms of shelf life, almost all cans of beef broth have a previous best or best date. The date is just an estimate of how long the item will stay fresh. Because beef stock usually contains preservatives, and canned foods often last a long time, store-bought beef stock can be stored for years after its expiration date.
This does not guarantee that it will be as good in three years as it is now, but it will most likely be completely safe for consumption. The broth will keep in the refrigerator for about 4 to 5 days after the can is opened.
Because it does not contain preservatives, homemade beef broth is easier to spoil. That means it will only last 3 to 4 days in the fridge. Freeze if you want to keep it longer.

I just finished solving this problem. The solution is simple and inexpensive. In an ice cube tray, freeze the stock or broth. Transfer the frozen cubes to a quart or gallon freezer bag, date and label the bag, and you’ll have stock whenever you need it. Simply defrost as many cubes as you need on the stove or in the microwave to use. This is a better option than freezing an entire batch in one large container because small portions can be thawed quickly and safely.

Almost every time I cook, I end up having leftover chicken stock. I usually buy chicken stock in boxes because most recipes call for more than one can and, to be honest, the boxes are easier to manage. However, most recipes don’t require the use of a whole box of chicken stock. Unless, of course, you’re making soup. As a result, there is always a residue. And then I put it in the fridge, forgot about it, and had to throw it away.
When I make Homemade Chicken Broth (recipe here), I keep it in the freezer. That recipe makes 6-8 cups of broth, which I won’t use unless I’m preparing Homemade Chicken Soup (recipe here). So it went to the freezer!
Freezing in muffin tins and ice cube trays is my method of choice. My muffin tin holds about 1/3 cup of liquid, whereas my ice cube tray holds about 4 Tablespoons. I make less broth and only take what I need.
Fill your container halfway with water to test how much it can hold before you start. Then you’ll know that if a recipe calls for 1 cup of chicken stock and your muffin tins hold 1/3 cup each, you’ll need to remove 3 frozen broth discs. Then pour the broth into an easy-to-pour container. It’s hard to pour from the can into the little ice cube tray. Use a measuring cup with a fine spout or pour directly from the stock box. Since stock is mostly water, it will expand slightly when frozen. Make sure your compartment isn’t too full, otherwise you’ll have frozen chicken stock all over the place.
Overnight, freeze ice cube trays and muffin tins. Then place them for a few minutes at room temperature, just until the edges start to warm up. This will make removing the frozen cubes much easier. Remove all cubes and discs from the freezer and place them in a Ziploc freezer bag. Remove the bag and store the broth for up to 6 months in the freezer.
It’s easy to freeze larger dishes. Fill a Ziploc freezer bag with as much chicken stock as you want. This is one of those instances when you want to splurge and use a genuine Ziploc bag instead of a store-bought one. I think other brands leak too much when I cool the liquid. While a quart bag could theoretically hold 4 cups of broth, I usually only use 2 cups. I believe this helps in leak prevention and makes the freezing process a bit easier.
Freeze the bag by laying it flat on the baking sheet. Once frozen, you can stack them or store them for simple storage.
Frozen chicken stock can be used straight from the freezer. Just take as much as you need and put it in whatever you’re cooking because you know how much broth is in each cube (you didn’t measure it first, did you?). In order for the frozen broth to thaw, you may need to add a few minutes to the cooking time.
Alternatively, you can thaw frozen stock overnight in the refrigerator. Place frozen cubes in jars with lids. If you’re going to defrost the bag, put it in a bowl with a lip to catch the spill. Otherwise, your refrigerator will be a mess. (Just take my word for it…)
