Pauls is used to reaching for energy bars to get through the day as a busy mother of three, researcher, and doctor. Unfortunately, there are no energy bars or convenient snacks on the shelf that are low-FODMAP-friendly.
That’s when doctors came up with the idea for Happy Bars, an IBS-friendly snack brand. She also embarked on a personal mission to educate other IBS sufferers about the benefits of a low-FODMAP diet.
FODMAPs (Fermentable Oligo-, Di-, Mono-, and Polyols) are carbohydrates that are difficult to digest in the intestines and can cause IBS symptoms such as gas, bloating, cramping, constipation, and diarrhea.
Pauls claims he is symptom-free after switching to a low-FODMAP diet. He is currently on a modified version of the diet. Not everyone is able to do it.
Pauls’ Happy Bars range expanded to five varieties this year with the inclusion of oatmeal and raisins.
He also introduced a new line of FODMAP-free beef jerky. According to Pauls, jerky is one of the fastest growing snacks on the market. Most beef jerky is high in FODMAPs due to the spices and flavours.
“Along with offering consumers low FODMAP products, one of our goals has always been to raise awareness of how the (low FODMAP diet) can improve their systems,” added Pauls.
Doctors and nutritionists have few tools to assist them in advising their patients.
He stated that there are resources accessible to people suffering from different ailments.
“It includes a food list, and you can download it to your phone so you can have it in your notepad, according to Pauls. “It contains all the things I learned through trial and error.

Is jerk seasoning FODMAP friendly
Jerk seasoning is a must-have ingredient in Caribbean cuisine. This spice mix is complex and can be used in a variety of foods, including meat and seafood. While the amount of each blend varies, they all depend on two main ingredients: allspice and chili. Salt, cloves, cinnamon, nutmeg, thyme, brown sugar, ginger, scallions, and garlic can all be used in varying proportions.
I have had to make many of my own dishes since starting the Low FODMAP Diet to mimic the taste of foods I can no longer eat, such as garlic and other alliums. Many store-bought spice blends only have a limited or partial list of what they contain for proprietary reasons, making it almost difficult for someone with food sensibilities to determine what is safe and what is not. This FODMAP-friendly Jerk Flavor Blend contains no garlic or shallots and is a great seasoning for any recipe that calls for a little Caribbean twist. Make large batches and store them in the fridge whenever you need something sweet and spicy!
Basic Seasoning Seasoning Mix
The term “jerky” (as used in cooking) has a tangled etymology, but comes from the same root as jerky, meaning dried or cured beef. Jerk spice mixes are a common ingredient in Caribbean cuisine, and they were thought to have originated in Africa before being adopted by Caribbean and West Indian tribes.
The Scotch Bonnet Pepper, a native Caribbean capsicum, is used in the traditional jerk seasoning. Since dried Scotch Bonnets are a specialty that’s hard to come by in most supermarkets, I use red chili flakes instead to add smoldering heat to our Seasoning Seasoning Mix. To extend the shelf life of the mixture, I’ve left out brown sugar, but feel free to add brown sugar to any meat you want to use with the perfect amount of sweetness and caramelization for which Caribbean seasoned meats are known. .
