- Spread homemade mayo (recipe below) on thick crusty white or rye bread. Also on the side are lettuce, sliced tomato, thick slices of leftover ham, a few slices of dill pickle and slices of cheddar cheese. Spread whole grain mustard on another slice of bread and close the sandwich.
Homemade Mayonnaise:
- In a medium non-reactive heatproof bowl, whisk together egg yolks, vinegar, and 1 tablespoon water (glass or ceramic). Put a large plate filled with ice water. In a saucepan over medium-low heat, bring 2 inches of water to a boil.
- Put the egg yolk mixture in a bowl and place on the pan (do not let the bowl touch the water). Whisk slowly for 4 to 5 minutes, or until a thermometer inserted into the egg yolk mixture reads 150 degrees Fahrenheit.
- To stop cooking, place the bowl with the egg yolk mixture in the ice water and stir until the mixture is warm (don’t let it get cold).
- Place a damp towel over the bowl with the egg yolk mixture. 1/4 teaspoon salt in measuring cup, mix with oil. Slowly drop the oil into the bowl in a thin stream, stirring constantly, until smooth and thick. If the oil does not emulsify into the mixture, stop adding the oil and stir to combine before continuing. If the mayonnaise is too thick, add 1 to 2 tablespoons of water. Season with salt and pepper. If covered, refrigerate for up to 4 days.

In a heated frying pan, place a piece of butter side down. Swiss cheese and ham top the list. Spread mayonnaise and mustard on the unbuttered side of the second slice of bread, then place butter side up on the sandwich. Cook in heated skillet for 3 minutes per side, until golden brown and cheese is melted.
