- In a medium non-reactive heatproof bowl, whisk together the egg yolks, vinegar, and 1 tablespoon water (glass or ceramic). Set aside a large plate of iced water. In a saucepan over medium-low heat, bring 2 inches of water to a boil.
- Place the egg yolk mixture in a bowl over the saucepan (don’t let the bowl touch the water). Beat gently for 4 to 5 minutes, or until a thermometer inserted into the yolk mixture shows 150 degrees F.
- To stop cooking, dip the bowl of egg yolk mixture into the iced water and stir until the mixture is lukewarm (don’t let it cool).
- Place a damp towel over the bowl with the egg yolk mixture. 1/4 teaspoon salt In a measuring cup, mix the oil. Slowly pour the oil into the bowl in a thin stream, stirring constantly, until smooth and thick. Stop adding oil and shake to incorporate before continuing if the oil does not emulsify into the mixture. If the mayonnaise is too thick, add 1 to 2 tablespoons of water. Season with salt and pepper. Refrigerate for up to 4 days if covered.
