What is Berkshire Ham?

The best ham is made from Berkshire pork, commonly known as black pig. Our uncured, fully cooked and ready-to-eat hams are seasoned with sea salt and raw cane sugar and naturally smoked on apple wood, with no nitrates, nitrites, phosphates or artificial fillers. Berkshire pigs are raised on pasture free of antibiotics or hormones by a group of small farms committed to ethical and sustainable farming practices.

Is Berkshire ham good

Berkshire pork is known for its ideal balance of juiciness, flavor and tenderness. For over 300 years, it has been known for its incredible meat. In Japan, Berkshire pork is called “Kurobuta” and its unique flavor rivals Kobe beef.

How is Berkshire pork different from regular pork

Berkshire’s pork is unique. It doesn’t look like the pork you’re used to. As tastes have evolved, modern lean pork is extremely low in fat, which is why most pork is now more similar to chicken. On the other hand, Berkshire pork is juicy and has a unique pork flavor. Berkshire pork is sweeter, redder, and rich in intramuscular fat, making it softer and juicier than regular pork. This is how the pork is cooked. Once you’ve tried Berkshire pork, you’ll find it hard to go back to that “other white meat.”

What Makes Berkshire Pork So Special

Berkshire pigs have been the subject of countless taste tests, surveys and general studies. Berkshire pork is genetically predisposed to produce the highest grade pork due to its shorter muscle fibers and rich marbling, which contributes to the flavor and tenderness of the meat. They also claim that the animal’s lack of stress is what makes Berkshire pigs so juicy and tender. The meat becomes dry and rough due to the pressure. Berkshire pigs grown on OFD farms are maintained in a stress-free environment, which means they are generally free to roam around and have enough shade to keep them cool.

What’s the best way to cook Berkshire ham

Ham can be eaten cold at room temperature or heated, with or without glaze, as it is fully cooked.

Bring ham to room temperature before heating. Take it out of the refrigerator at least an hour before you plan to heat it up. Preheat oven to 300 degrees Fahrenheit.

Place the ham fat side up on a rack on a heavy-bottomed baking sheet. Fill a pan with 1/4 to 1/2 inch of water or other liquid of your choice.

Cover the ham with a piece of parchment paper and wrap in aluminum foil. Heat in the oven until it reaches about 140 degrees (about 10 minutes per pound of ham). To do this, use an oven-safe probe thermometer and insert it into the thickest part of the ham without touching the bone. The time it takes to heat a ham depends on your oven and the size of the ham.

Remove ham from oven, cover with foil and let rest for a few minutes. This is a safe way to heat a ham and it won’t dry out as long as you keep an eye on it.

To make a spiral ham, simply place the cut side down on a sheet of heavy duty foil. Wrap the ham tightly in foil and bake at 300F until a meat thermometer inserted into the thickest part of the ham reads 140F.
