- Cooking Whole Pork: With a three-minute rest period, the USDA has lowered the recommended safe cooking temperature for whole pork from 160 oF to 145 oF. Cook pork, roasts, and chops to 145F on a food thermometer, then remove them from the heat and let them rest for three minutes before carving or eating. As a result, the product will be both safe and of the highest quality, juicy and soft.
- Cook whole cuts of other meats: The safe temperature for beef, veal, and lamb remains at 145 degrees Fahrenheit, but the FDA adds a three-minute rest period to its cooking recommendations.

- If a single time and temperature combination is used for all meat, consumers will be more likely to recall the temperature at which meat is safe to eat.
Food thermometers should be placed where the food is thickest. It should not come into contact with bone, fat or cartilage. Start testing the temperature at the end of the cooking process, but before you think it’s done. Be sure to wipe the food thermometer with hot soapy water before and after each use.
