Most Italian beef in Chicago is served on a Turano roll or Gonnella French roll, which is always a bit lacking in my opinion, especially when compared to the crisp, crisp buns used for New Orleans po’ boys or Philadelphia cheese steaks. However, after some experimentation, I realized why these scrolls were used. Unlike very crunchy rolls, which may become mushy and floppy after dipping, French rolls stay healthy and firm after dipping.
