How long does the bacon sauce last
Don’t confuse bacon jam with other jams and jellies that have been canned for shelf stability. Bacon spread cannot be canned and must be refrigerated in an airtight container such as a mason jar. Bacon jam will stay fresh and delicious for 2 to 3 weeks if stored and refrigerated properly.
Pack cooled bacon jam into straight shoulder mason jars with about 1 inch of headroom and freeze for extended shelf life. While frozen jam can be frozen for up to a year, for the best quality, I recommend thawing frozen bacon jam within 6 to 7 months. To thaw jam safely, thaw it completely in the refrigerator. We infer from the recent debate about bacon spread that the finished product is kept at room temperature. Bacon sauce should not be kept at room temperature. Botulism is a deadly foodborne illness caused by a neurotoxin produced by the bacterium botulinum, a spore-forming bacterium. Storing bacon sauce at room temperature increases the risk of botulism. How likely is this to happen?
Bacon, onion, garlic, sugar and acid sources are used in all bacon jam recipes (cider or sherry vinegar). Spices are used in some recipes.
- Bacon contains salt and sodium nitrite, preservatives that prevent botulism from growing when combined with refrigeration.
- Onions and garlic are low-acid foods that grow on soil with botulinum spores. Outbreaks of foodborne botulism have been linked to garlic in oil kept at room temperature.
- Despite the addition of acid, the pH of the final product is unknown. A pH below 4.6 is required to prevent botulism from growing and developing botulism.
- Although bacon jam is cooked during production, there is no final heating step to kill contaminating yeast and mold after the jam is in the jar. Mold and yeast can raise the pH of acidic products (lower the acidity), making it easier for botulinum to germinate, multiply, and produce toxins.
Some bacon jam recipes state that the jam should be refrigerated or frozen after making it. Some do not provide any storage instructions. We strongly recommend refrigerating the bacon sauce until the time specified in the recipe (2-4 weeks) or freezing for longer shelf life.
