Nitrite has long been a controversial food additive, with research showing that when heated in the presence of proteins, such as those found in meat, they produce carcinogenic chemicals called nitrosamines. Bacon is usually preserved with nitrite (NO2) or nitrate (NO3), two chemically similar preservatives, although only nitrite has the ability to produce potentially harmful nitrosamines. “Nitrate or nitrite-free” bacon, on the other hand, is marinated with celery juice, salt, and a starter culture of lactic acid bacteria (sometimes listed as “natural flavors).
But there’s a snag: Celery juice contains large amounts of organic nitrates, which are converted to harmful nitrites by bacteria in early cultures and saliva when chewed. Nonetheless, it is technically correct to identify bacon as “no nitrates or nitrites added,” because the compound is produced during the manufacturing process rather than added as an ingredient. The question is, how do the nitrite and nitrate levels in uncured meat compare to those in cured meat?
Tasters found that Farmland Hickory Smoked and Farmland All-Natural Uncured Bacon (“no nitrates or nitrites added”) had nearly the same taste and texture when we cooked our favorite shop bacon slices. We sent three packets of each type of bacon to the laboratory for testing to determine the levels of nitrite and nitrate. For comparison, we also provide three Applegate Farms Uncured Sunday Bacon, Best Buy packages of our artisanal bacon tasting (labeled “no nitrite added). All bacon includes nitrites and nitrates, as expected, and nitrite levels are within USDA standards of no more than 120 parts per million (ppm). Uncured bacon, however, has greater nitrite levels than cured bacon: Farmland Hickory Smoked Bacon has an average of 9.7 ppm nitrite (and 48 ppm nitrate), while its All-Natural counterpart has an average of 16 ,3 ppm nitrite (and 10.3 ppm nitrate) . And the nitrite level in Applegate Farms Uncured Sunday Bacon is more than three times higher than regular bacon: 35 ppm (and nearly the same nitrate, at 44.3 ppm).
Bottom line: All bacon, whether pre-added or naturally created during processing, is likely to contain nitrites and nitrates. You should avoid all bacon and other processed meats that contain celery juice if you want to avoid these substances.
